Teres Major Steak Recipe

Mariah Annader
Teres Major steak, also known as the shoulder tender, is a flavorful, tender cut of beef that's perfect for grilling or pan-searing. It's a great alternative to more expensive cuts like filet mignon but offers similar tenderness and flavor when cooked to perfection.

Equipment

  • Grill or cast-iron skillet
  • Meat thermometer (optional)
  • Tongs
  • Cutting board

Ingredients

  • 1 lb Teres Major steak shoulder tender
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp unsalted butter optional, for finishing
  • Fresh herbs optional, for garnish

Instructions

Prepare the Steak:

  • Pat the Teres Major steak dry with paper towels.
  • Rub the steak with olive oil on all sides, then season with garlic powder, onion powder, smoked paprika, salt, and black pepper. Allow the steak to sit at room temperature for about 15-20 minutes to absorb the seasonings.

Cook the Steak:

  • Grilling Method: Preheat the grill to medium-high heat. Grill the steak for about 4-5 minutes per side for medium-rare, or until the internal temperature reaches 130°F (54°C).
  • Pan-Seared Method: Heat a cast-iron skillet over medium-high heat. Add a drizzle of olive oil, then sear the steak for 4-5 minutes per side, or until the desired doneness is reached.

Rest the Steak:

  • Remove the steak from the heat and allow it to rest for 5 minutes. This allows the juices to redistribute throughout the steak, ensuring maximum tenderness.

Optional Butter Finish:

  • While the steak is resting, you can melt a tablespoon of unsalted butter in the skillet and drizzle it over the steak for added richness.

Slice and Serve:

  • Slice the Teres Major steak thinly against the grain and serve with your favorite sides. Garnish with fresh herbs if desired.

Notes

The Teres Major steak is best cooked to medium-rare to medium for optimal tenderness.
For extra flavor, you can marinate the steak for a few hours with herbs, garlic, and olive oil before cooking.
Serve with mashed potatoes, roasted vegetables, or a fresh salad for a complete meal.
