Tanghulu is a traditional Chinese street food where fruits are coated in a crunchy, sweet sugar glaze. This recipe shows you how to make Tanghulu in a microwave, making it quick and easy to prepare.

Equipment

Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup water
  • Fresh fruit strawberries, grapes, or small fruits
  • Skewers or wooden sticks

Instructions
 

Prepare the Fruit:

  • Wash and dry the fruits thoroughly. Any moisture left on the fruit can prevent the sugar from sticking properly.
  • Skewer the fruits onto the sticks and set them aside.

Line a Baking Sheet:

  • Line a baking sheet or plate with parchment paper or lightly coat with non-stick spray. This will be used to place the Tanghulu after coating.

Make the Sugar Syrup in the Microwave:

  • In a microwave-safe bowl, combine the sugar and water. Stir to combine.
  • Microwave the mixture on high for 3-5 minutes, watching carefully. You want the syrup to reach a temperature of around 300°F (150°C), which is the "hard crack" stage. If using a candy thermometer, check the temperature after 3 minutes. If you don’t have a thermometer, the syrup should appear bubbly and thick.

Coat the Fruit:

  • Once the sugar syrup is ready, carefully dip each fruit skewer into the syrup, rotating to fully coat the fruit.
  • Place the coated skewers on the prepared baking sheet to cool and harden.

Let the Tanghulu Set:

  • Allow the Tanghulu to sit for a few minutes until the sugar glaze hardens and becomes crunchy. Serve and enjoy immediately.

Notes

Be extremely careful when handling the hot sugar syrup as it can cause burns.
You can use a variety of fruits like strawberries, grapes, or blueberries. Avoid watery fruits as they might prevent the sugar from sticking properly.
If the sugar cools and hardens before you've coated all the fruit, you can reheat the sugar syrup in the microwave for 30 seconds to 1 minute.
