Equipment

Ingredients
  

  • 1 lb steak sirloin, ribeye, or flank, thinly sliced
  • 2 tbsp soy sauce divided
  • 1 tsp sesame oil optional
  • 2 tbsp vegetable oil
  • 3 cups cooked and cooled white rice preferably day-old
  • 2 eggs beaten
  • 1/2 cup frozen peas and carrots
  • 1/4 cup green onions chopped
  • 2 cloves garlic minced
  • 1 tbsp oyster sauce optional
  • 1 tbsp hoisin sauce optional
  • Salt and pepper to taste
  • Sesame seeds for garnish optional

Instructions
 

Marinate the Steak:

  • In a mixing bowl, toss the thinly sliced steak with 1 tablespoon of soy sauce and sesame oil (if using). Let it marinate for 10-15 minutes while you prep the other ingredients.

Cook the Steak:

  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Once hot, add the marinated steak slices and cook for 2-3 minutes per side, until browned and cooked through. Remove the steak from the pan and set aside.

Scramble the Eggs:

  • In the same wok, add the beaten eggs and scramble them quickly until just set. Remove the eggs from the pan and set aside with the steak.

Sauté the Vegetables:

  • Add another tablespoon of vegetable oil to the wok. Add the garlic, peas, and carrots, and stir-fry for 2-3 minutes until the vegetables are tender.

Fry the Rice:

  • Add the cooked rice to the wok, breaking up any clumps. Stir-fry the rice for 3-4 minutes until it becomes slightly crispy and heated through.
  • Add the remaining 1 tablespoon of soy sauce, oyster sauce, and hoisin sauce (if using) and stir to coat the rice evenly.

Combine Everything:

  • Add the cooked steak and scrambled eggs back into the wok. Stir in the chopped green onions and cook everything for another 1-2 minutes to combine and heat through. Season with salt and pepper to taste.
  • Serve and Garnish:
  • Transfer the steak fried rice to serving bowls and garnish with sesame seeds, additional green onions, or a drizzle of soy sauce if desired. Serve hot.

Notes

For extra flavor, you can add a splash of rice vinegar or sriracha for heat.
This recipe works well with day-old rice as it helps achieve the best texture. Freshly cooked rice may result in a mushier consistency.
You can swap the steak for other proteins like chicken, shrimp, or tofu.
