Ingredients
  

  • 1 cup roasted sweet potato mashed
  • 1/2 cup olive oil
  • 1/4 cup white miso paste
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup mixed seeds sunflower, sesame, poppy

Instructions
 

Preheat Oven:

  • Preheat oven to 350°F (175°C). Grease a loaf pan.

Mix Wet Ingredients:

  • In a bowl, whisk together mashed sweet potato, olive oil, miso, and sugar.

Combine Dry Ingredients:

  • Add flour, baking powder, and baking soda. Mix until combined.

Add Seeds:

  • Fold in half of the mixed seeds.

Bake:

  • for into the loaf pan, sprinkle remaining seeds on top, and bake for 50-60 minutes.

Notes

Use other seeds like pumpkin or flax for variation.
Ensure sweet potato is fully mashed for the best texture.
