Equipment

  • Zester or grater (for lemon zest)

Ingredients
  

  • 1 cup long-grain white rice or basmati rice
  • 2 cups water or chicken broth
  • 1 tbsp olive oil or butter
  • 1 garlic clove minced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1/4 cup fresh parsley chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Lemon wedges for serving

Instructions
 

Cook the Rice:

  • In a medium pot, heat the olive oil or butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the rice to the pot and stir for 1-2 minutes to lightly toast the rice.

Add Water and Simmer:

  • Pour in the water (or chicken broth) and add the salt. Stir to combine. Bring the mixture to a boil, then reduce the heat to low, cover the pot with a lid, and let the rice simmer for 15-18 minutes, or until the water is absorbed and the rice is tender.

Fluff and Add Flavor:

  • Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes.
  • Fluff the rice with a fork, then stir in the lemon zest, lemon juice, chopped parsley, black pepper, and additional salt to taste.

Serve:

  • Serve the lemon herb rice alongside your fish of choice. Garnish with lemon wedges for an extra citrusy kick.

Notes

You can use jasmine rice or brown rice for this recipe, but adjust the cooking time accordingly.
For extra flavor, substitute chicken broth for water.
Feel free to add other herbs like dill or cilantro, which pair well with fish.
