Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 cans 28 oz each whole peeled tomatoes
  • 1 cup vegetable or chicken broth
  • 1 tsp sugar optional, to balance acidity
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 cup heavy cream
  • Fresh basil chopped (optional, for garnish)

Instructions
 

  • Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Add Tomatoes and Broth: Add the canned tomatoes (including their juices), broth, sugar, salt, pepper, dried basil, and oregano. Stir to combine.
  • Simmer the Soup: Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes to allow the flavors to meld.
  • Blend the Soup: Use an immersion blender to blend the soup until smooth. If using a countertop blender, carefully blend the soup in batches, then return it to the pot.
  • Add the Cream: Stir in the heavy cream and heat through for an additional 5 minutes, but do not let it boil.
  • Serve: Ladle the soup into bowls and garnish with fresh basil if desired. Serve hot with your favorite bread or a grilled cheese sandwich.

Notes

For a vegan version, replace the heavy cream with coconut milk or a dairy-free alternative.
Adjust the thickness of the soup by adding more broth if needed.
