Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 cup quick-cooking grits
  • 4 cups chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • 4 slices bacon chopped
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 tbsp Cajun seasoning
  • 2 tbsp butter
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions
 

Cook the Grits:

  • Bring chicken broth to a boil in a medium pot. Stir in the grits, reduce heat, and simmer for 5 minutes, stirring occasionally. Add shredded cheddar cheese and heavy cream, stirring until smooth. Keep warm.

Cook the Bacon:

  • In a large skillet over medium heat, cook the chopped bacon until crispy. Remove bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.

Sauté Vegetables:

  • Add diced onion, bell pepper, and garlic to the skillet. Sauté until softened, about 4-5 minutes.

Cook the Shrimp:

  • Season the shrimp with Cajun seasoning, salt, and pepper. Add butter to the skillet, then add shrimp. Cook until the shrimp are pink and cooked through, about 2-3 minutes per side.

Assemble:

  • Serve shrimp over the cheesy grits, and top with the sautéed vegetables, crispy bacon, and chopped green onions.

Notes

For extra heat, add a pinch of cayenne pepper to the shrimp.
Substitute the cheddar with gouda for a richer flavor.
