Equipment

  • Mandoline slicer (optional, for thin slicing)
  • Deep frying pan or deep fryer
  • Paper towels for draining
  • Tongs

Ingredients

  • 4 medium potatoes thinly sliced
  • 1/4 cup cornstarch for extra crispiness
  • Vegetable oil for frying
  • 1 tsp cayenne pepper adjust to taste
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

Prepare the Potatoes:

  • Wash and peel the potatoes if desired. Use a mandoline slicer or a sharp knife to slice the potatoes into thin, even chips or fries.

Rinse and Dry:

  • Rinse the potato slices under cold water to remove excess starch, then pat them dry with paper towels. This will help them become extra crispy when fried.

Coat with Cornstarch:

  • Lightly coat the potato slices with cornstarch, tossing to evenly distribute. Shake off any excess cornstarch.

Heat the Oil:

  • In a deep frying pan or deep fryer, heat vegetable oil to 350°F (175°C). The oil should be deep enough to submerge the chips or fries.

Fry the Chips/Fries:

  • Fry the potato slices in batches, being careful not to overcrowd the pan. Fry for 3-4 minutes or until golden brown and crispy. Remove the fries with a slotted spoon and drain on paper towels.

Season the Fries:

  • While the fries are still hot, sprinkle them with the cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper. Toss to coat the fries evenly with the spicy seasoning.

Serve:

  • Serve the hot fries chips fresh and enjoy immediately. These spicy fries are great on their own or with a dipping sauce like ranch or ketchup.

Notes

You can adjust the spice level by adding more or less cayenne pepper to suit your taste.
For extra flavor, sprinkle with grated Parmesan cheese or add a squeeze of lime juice.
These fries are best enjoyed fresh and hot but can be kept warm in a 200°F (90°C) oven while you finish frying the rest.
