French Chicken Recipe (Poulet à la Provençale)

Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 4 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup black or green olives pitted
  • 1 tbsp capers optional
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp herbes de Provence optional
  • 1/4 cup fresh basil or parsley chopped (for garnish)
  • Salt and pepper to taste

Instructions
 

Prepare the Chicken:

  • Season the chicken thighs with salt, pepper, and a pinch of dried thyme and rosemary.

Sear the Chicken:

  • Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken thighs, skin side down, and cook for about 5-7 minutes until the skin is golden and crispy. Flip and cook the other side for another 3-4 minutes. Remove the chicken from the pan and set aside.

Sauté the Aromatics:

  • In the same skillet, add the chopped onion and sauté for about 3-4 minutes, until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Make the Sauce:

  • Pour in the diced tomatoes, chicken broth, olives, capers (if using), and the remaining thyme and rosemary. Stir to combine. Bring the sauce to a simmer.

Simmer the Chicken:

  • Return the chicken thighs to the skillet, nestling them into the sauce. Reduce the heat to low and cover the pan. Simmer for 25-30 minutes, or until the chicken is cooked through and tender.

Finish and Serve:

  • Once the chicken is cooked, remove the pan from the heat. Garnish with fresh basil or parsley. Serve the chicken and sauce over rice, mashed potatoes, or crusty French bread.

Notes

This dish can also be made with boneless, skinless chicken breasts, but reduce the cooking time accordingly.
For a richer flavor, add a splash of white wine to the sauce along with the chicken broth.
Herbes de Provence is a blend of dried herbs typically used in French cooking and can be substituted with Italian seasoning if unavailable.
