Ingredients
  

For the Dough:

  • 1 sheet Puff pastry thawed
  • 1/4 cup Granulated sugar for sprinkling

For the Cookie Filling:

  • 1/2 cup Unsalted butter softened
  • 1/2 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 1 1/4 cups All-purpose flour
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 cup Mini chocolate chips

Instructions
 

  • Prepare the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined. Stir in the flour, baking soda, and salt until a dough forms. Fold in the mini chocolate chips. Chill the dough for 30 minutes.
  • Roll and Shape the Crookies: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out the puff pastry sheet on a lightly floured surface and sprinkle evenly with granulated sugar. Cut the pastry into squares (about 4x4 inches).
  • Fill with Cookie Dough: Place a small scoop of the chilled cookie dough (about 1 tablespoon) in the center of each pastry square. Fold the corners of the pastry over the dough to enclose it, pinching to seal.
  • Bake: Place the filled pastries on the prepared baking sheet, seam side down. Bake in the preheated oven for 15-18 minutes or until the pastry is golden brown and puffed.
  • Cool and Serve: Let the Crookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

For added flavor, sprinkle the tops of the Crookies with a pinch of sea salt before baking. You can also experiment with different fillings like Nutella, jam, or peanut butter chips.
