Ingredients
  

  • 4 cod fillets 6-8 oz each
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs or panko
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 1/4 cup milk
  • Oil for frying vegetable or canola oil
  • Lemon wedges for serving

Instructions
 

Prepare the Dredging Station:

  • In one shallow bowl, add the flour seasoned with garlic powder, onion powder, paprika, salt, and black pepper.
  • In a second bowl, whisk the eggs and milk together.
  • In a third bowl, place the breadcrumbs or panko.

Coat the Cod Fillets:

  • Pat the cod fillets dry with a paper towel to remove any excess moisture.
  • Dredge each fillet in the flour mixture, shaking off the excess.
  • Dip the fillets into the egg mixture, then coat them with breadcrumbs or panko, pressing gently to ensure the coating sticks.

Heat the Oil:

  • In a large frying pan or deep fryer, heat about 1/2 inch of oil over medium-high heat. The oil should reach about 350°F (175°C) for optimal frying.

Fry the Cod Fillets:

  • Carefully place the coated cod fillets into the hot oil. Fry for about 3-4 minutes per side, or until golden brown and crispy.
  • Use tongs to flip the fish carefully, and continue frying until the fillets are fully cooked (internal temperature of 145°F or 63°C).

Drain and Serve:

  • Remove the fried cod fillets from the oil and place them on a plate lined with paper towels to drain any excess oil.
  • Serve hot with lemon wedges, tartar sauce, and your favorite sides.

Notes

For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs.
Cod can be substituted with other white fish like haddock or tilapia.
To add a little kick, mix cayenne pepper into the flour for a spicier coating.
