Ingredients
  

  • 2 pounds of chicken breast boneless and skinless
  • 1 cup of celery finely chopped
  • 1 cup of red grapes halved
  • 3/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions
 

  • In a large pot, cover the chicken breasts with water, bring to a boil, then reduce to a simmer. Cook for 10-15 minutes or until fully cooked. Remove from water, let cool, and then shred.
  • In a large mixing bowl, combine the shredded chicken, chopped celery, and halved grapes.
  • In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  • For the dressing over the chicken mixture and stir to combine thoroughly. Chill in the refrigerator for at least one hour before serving.
  • Serve the chicken salad garnished with fresh dill.

Notes

For a lighter version, substitute Greek yogurt for half of the mayonnaise. Add a pinch of cayenne pepper for a little spice if desired.
