Ingredients
  

  • 2 cups Chicken of the Woods mushrooms cleaned and sliced
  • 2 tbsp Olive oil
  • 3 cloves Garlic minced
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Dried thyme
  • Salt and pepper to taste
  • 1 tbsp Lemon juice
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Prepare the Mushrooms: Clean the Chicken of the Woods mushrooms by brushing off any dirt. Slice them into strips or bite-sized pieces.
  • Heat the Oil: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  • Cook the Mushrooms: Add the sliced mushrooms to the skillet. Sprinkle with smoked paprika, dried thyme, salt, and pepper. Sauté for 5-7 minutes, stirring occasionally, until the mushrooms are golden and tender.
  • Finish with Lemon: Drizzle the mushrooms with lemon juice and cook for an additional minute.
  • Serve: Garnish with fresh parsley and serve hot as a side dish, or use as a meat substitute in your favorite recipes.
