Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1/4 cup all-purpose flour for dredging
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup lemon juice
  • 1/4 cup white wine optional
  • 1 can 14 oz marinated artichoke hearts, drained and halved
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley chopped (for garnish)

Instructions
 

  • Prepare the Chicken: Season the chicken breasts with salt and pepper. Dredge each piece lightly in flour, shaking off the excess.
  • Cook the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides and cooked through, about 5-6 minutes per side. Remove the chicken from the pan and set aside.
  • Sauté Garlic: In the same skillet, add the minced garlic and cook for 1 minute until fragrant, but not browned.
  • Make the Sauce: Add chicken broth, heavy cream, lemon juice, and white wine (if using) to the skillet. Whisk to combine and bring to a simmer. Let it cook for 3-4 minutes until slightly thickened.
  • Add Artichokes and Parmesan: Stir in the marinated artichoke hearts and Parmesan cheese. Let the sauce simmer for another 2 minutes to heat the artichokes.
  • Combine and Serve: Return the chicken breasts to the skillet, spooning the sauce over the top. Simmer for an additional 2 minutes. Garnish with fresh parsley and serve immediately.

Notes

For a lighter version, you can substitute half-and-half for heavy cream.
Serve this dish with pasta, rice, or crusty bread to soak up the delicious sauce.
