Ingredients
  

  • 2 cups Elbow macaroni
  • 1/4 cup Unsalted butter
  • 1/4 cup All-purpose flour
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Paprika
  • 1 1/2 cups Sharp cheddar cheese shredded
  • 1/2 cup Monterey Jack cheese shredded
  • 1/2 cup Parmesan cheese shredded
  • 1/4 cup Velveeta cheese cubed
  • 1/2 cup Colby Jack cheese shredded (for topping)

Instructions
 

  • Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.
  • Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
  • Add Milk and Cream: Gradually whisk in the milk and heavy cream. Continue to whisk until the mixture thickens, about 3-4 minutes.
  • Add the Cheeses: Stir in the salt, pepper, paprika, cheddar cheese, Monterey Jack, Parmesan, and Velveeta. Continue stirring until the cheese is fully melted and the sauce is smooth.
  • Combine with Pasta: Add the cooked macaroni to the cheese sauce, stirring to combine until the pasta is evenly coated.
  • Bake: Pour the mac and cheese into the baking dish and sprinkle with Colby Jack cheese. Bake in a preheated oven at 350°F (175°C) for 10-15 minutes or until the top is golden and bubbly.

Notes

For an extra crispy top, broil the mac and cheese for the last 2-3 minutes of baking. This dish can be reheated in the oven for the best texture, or microwave for a quick warm-up.
