Ingredients
  

  • 4 6 oz corbina fillets, skin on
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Lemon wedges for serving

Instructions
 

Prepare the Marinade:

  • In a mixing bowl, whisk together olive oil, lemon juice, garlic, parsley, thyme, salt, and pepper.

Marinate the Fish:

  • Place the corbina fillets in a shallow dish and pour the marinade over them. Let marinate for 15-20 minutes at room temperature.

Preheat the Grill:

  • Preheat your grill or grill pan to medium-high heat. Oil the grates to prevent sticking.

Grill the Corbina:

  • Place the fillets on the grill skin-side down. Cook for 4-5 minutes per side, or until the fish flakes easily with a fork.

Serve:

  • Remove from the grill and serve immediately with lemon wedges on the side.

Corbina is a delicate fish, so avoid overcooking to maintain its tender texture.
