Ingredients
  

For the Tart Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 2-3 tablespoons cold water

For the Plum Filling:

  • 4-5 ripe plums thinly sliced
  • 1/3 cup granulated sugar adjust based on the sweetness of the plums
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1 tablespoon apricot jam optional, for glazing

Instructions
 

Prepare the Crust:

  • In a mixing bowl, combine flour, sugar, and salt. Cut in the cold butter using a pastry cutter or food processor until the mixture resembles coarse crumbs.
  • Add the egg yolk and cold water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

Roll Out the Dough:

  • On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer to the tart pan, pressing it into the edges and trimming any excess dough.

Prepare the Plum Filling:

  • In a bowl, toss the sliced plums with sugar, cornstarch, cinnamon, and lemon juice until well coated.

Assemble the Tart:

  • Arrange the plum slices in a circular pattern in the prepared tart crust. Pour any remaining juice over the top.

Bake the Tart:

  • Bake in the preheated oven for 35-40 minutes, or until the crust is golden and the plums are tender.

Glaze (Optional):

  • If desired, heat the apricot jam until it becomes runny and brush it over the warm tart for a glossy finish.

Cool and Serve:

  • Let the tart cool slightly before serving. Enjoy warm or at room temperature, optionally with a scoop of vanilla ice cream or whipped cream.

Notes

You can substitute plums with other stone fruits like peaches or nectarines. Adjust the sugar based on the fruit's natural sweetness.
