Ingredients
  

  • 2 cups cooked porridge oatmeal – cooled to room temperature
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon honey or maple syrup optional, for sweetness
  • 1/4 cup plain yogurt or buttermilk
  • 1 large egg
  • 1 tablespoon melted butter or vegetable oil
  • 2 tablespoons rolled oats for topping, optional

Instructions
 

Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Grease a loaf pan and set it aside.

Mix the Dry Ingredients:

  • In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Stir to mix well.

Combine Wet Ingredients:

  • In another bowl, mix the cooled porridge, honey or maple syrup, yogurt, egg, and melted butter. Stir until well combined.

Mix the Dough:

  • Pour the wet ingredients into the dry ingredients. Gently fold until just combined. Be careful not to overmix; the batter should be thick and slightly lumpy.

Pour into Pan and Top:

  • Pour the batter into the prepared loaf pan and smooth the top. Sprinkle rolled oats over the top if desired for added texture.

Bake:

  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:

  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

This bread is perfect for using leftover porridge. Adjust the amount of sweetness based on your preference or skip it entirely for a more savory loaf.
Store leftovers in an airtight container at room temperature for up to 3 days or freeze for longer storage.
