Ingredients
  

  • 1 lb white fish fillets such as cod or haddock, cut into 2-inch pieces
  • 1/2 lb littleneck clams scrubbed clean
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 2 cups fish stock or chicken broth
  • 1 cup diced tomatoes canned or fresh
  • 1/2 cup dry white wine
  • 1/4 tsp dried thyme
  • 1/4 tsp dried parsley
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
  • Add Potatoes and Broth: Add diced potatoes to the pot, followed by fish stock or chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes until potatoes are tender.
  • Stir in Tomatoes and Seasonings: Add diced tomatoes, white wine, thyme, parsley, salt, and pepper. Stir well and simmer for another 5 minutes.
  • Add Fish and Clams: Gently place fish pieces and clams into the pot. Cover and cook for 8-10 minutes until the clams open and the fish is cooked through.
  • Serve: Ladle the stew into bowls, garnish with fresh parsley, and serve hot with crusty bread on the side.

Notes

Substitute fish stock with chicken broth if fish stock is unavailable.
Ensure clams are thoroughly cleaned before adding to the pot.
