  • Medium pot for rice
  • Spatula

Ingredients
  

For the Fish:

  • 4 white fish fillets cod, tilapia, or halibut
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Lemon wedges for serving

For the Rice:

  • 1 cup long-grain white rice
  • 2 cups water or chicken broth
  • 1 tbsp butter or olive oil
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley optional

Instructions
 

Prepare the Rice:

  • In a medium pot, bring 2 cups of water or chicken broth to a boil.
  • Add the rice, butter or olive oil, and salt. Stir to combine, then reduce the heat to low, cover the pot, and let the rice simmer for about 15 minutes, or until the water is absorbed and the rice is tender.
  • Once cooked, fluff the rice with a fork and stir in chopped fresh parsley if desired.

Season the Fish:

  • While the rice is cooking, season both sides of the fish fillets with garlic powder, paprika, onion powder, salt, and pepper.

Cook the Fish:

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Once the oil is hot, add the fish fillets to the skillet. Cook for about 3-4 minutes per side, depending on the thickness of the fillets, until the fish is golden brown and flakes easily with a fork.

Serve:

  • Serve the fish over the cooked rice and garnish with lemon wedges for squeezing over the top.

Notes

You can use any white fish you prefer for this recipe, such as cod, tilapia, or halibut.
To add more flavor to the rice, cook it in chicken broth or vegetable broth instead of water.
Serve the dish with steamed vegetables or a side salad for a complete meal.
