Ingredients
  

  • 1 lb ground pork or chicken
  • 1 tbsp sesame oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 1 14 oz bag of coleslaw mix or shredded cabbage
  • 1/4 cup soy sauce or tamari for gluten-free
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha optional, for spice
  • 1 tsp sesame seeds optional, for garnish
  • 2 green onions sliced (for garnish)

Instructions
 

  • Heat a large skillet or wok over medium heat and add the sesame oil.
  • Add the ground pork (or chicken) and cook, breaking it apart with a spatula until fully cooked and browned, about 5-7 minutes.
  • Add the chopped onion, garlic, and ginger to the skillet. Sauté for 2-3 minutes until fragrant and the onions are softened.
  • Stir in the coleslaw mix or shredded cabbage. Cook for about 5-7 minutes until the cabbage is wilted but still slightly crisp.
  • Pour in the soy sauce, rice vinegar, and sriracha (if using). Stir well to combine all the ingredients.
  • Continue cooking for another 2-3 minutes until the sauce is heated through.
  • Remove from heat and garnish with sesame seeds and sliced green onions.
  • Serve immediately.

Notes

For a keto-friendly version, use coconut aminos instead of soy sauce.
You can substitute ground beef or turkey if preferred.
Add more vegetables like shredded carrots or bell peppers for extra flavor and nutrients.
