Equipment

  • Baking sheet or pizza stone
  • Rolling Pin
  • Mixing bowl
  • Whisk
  • Knife and cutting board

Ingredients

For the Pizza:

  • 1 Pre-made pizza dough or homemade pizza dough
  • 1 cup Shredded mozzarella cheese
  • 1/2 cup Cherry tomatoes halved
  • 1/4 cup Red onion thinly sliced
  • 1/4 cup Crumbled feta cheese optional
  • Olive oil for brushing

For the Chimichurri Sauce:

  • 1 cup Fresh parsley chopped
  • 1/4 cup Fresh cilantro chopped
  • 3 cloves Garlic minced
  • 1/4 cup Olive oil
  • 2 tbsp Red wine vinegar
  • 1/2 tsp Red pepper flakes optional, for heat
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  • Preheat Oven: Preheat your oven to 475°F (245°C). Place a pizza stone in the oven if you have one, or prepare a baking sheet by lightly oiling it.
  • Prepare the Chimichurri Sauce: In a mixing bowl, combine the chopped parsley, cilantro, minced garlic, olive oil, red wine vinegar, red pepper flakes (if using), salt, and black pepper. Stir until well combined and set aside.
  • Roll Out the Dough: On a lightly floured surface, roll out the pizza dough to your desired thickness. Transfer the dough to the prepared baking sheet or pizza stone.
  • Assemble the Pizza: Brush the pizza dough lightly with olive oil. Spread half of the chimichurri sauce evenly over the dough. Sprinkle the shredded mozzarella cheese over the top, followed by the halved cherry tomatoes, sliced red onion, and crumbled feta cheese (if using).
  • Bake: Bake the pizza in the preheated oven for 10-12 minutes, or until the crust is golden and the cheese is melted and bubbly.
  • Top with Remaining Chimichurri: Remove the pizza from the oven and drizzle the remaining chimichurri sauce over the top. Slice and serve immediately.

Notes

For an extra crispy crust, bake the pizza on the lowest rack of your oven. You can also add other toppings like grilled chicken or roasted red peppers for added flavor.
