Ingredients
  

  • 3 ripe bananas mashed
  • 1/2 cup Greek yogurt plain or vanilla
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter melted (or coconut oil for a lighter option)
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon optional
  • 1/2 cup chopped walnuts or chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  • In a large bowl, mash the bananas until smooth. Add the Greek yogurt, melted butter, and both sugars, mixing until well combined.
  • Stir in the eggs and vanilla extract until smooth.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Be careful not to overmix.
  • Fold in walnuts or chocolate chips if using.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For extra moisture, substitute half of the butter with additional Greek yogurt.
You can use flavored Greek yogurt for a twist on the traditional banana bread.
Store in an airtight container at room temperature for up to 3 days.
